This simple pancake recipe mostly made with ingredients you likely already have in your home (especially if you happen to already be cooking plant-based), makes a just-right, light and fluffy, yet buttery-buttermilk tasting pancake.
What's more? The recipe accomplishes the above taste without all the weird ingredients often found in plant-based recipes. This pancake recipe also does not use dairy and eggs and No One would know it! (Dairy and eggs are products of industries that cause animals unnecessary physical pain.) No one should or could even tell these pancakes can be considered 'vegan.' ...and anyway, labels, schmabels - seriously. Who cares if they are delicious and prevent contributing to pain and cruelty. Oh, did I mention this pancake recipe is eloquent and EASY? Truly, this is the most delectable, crowd-pleasing, perfect-textured, perfectly browned in color, delightful to the taste-buds pancake I've personally ever had. I highly recommend giving it a try! Just follow the simple recipe. Very few bowls and tools are required. You can use as much or as little spelt flour as you want and we recommend playing around with the perfect combination for you. Everything else is standard for making this staple must-have breakfast recipe down to a 't.' Why ever make pancakes with dairy or egg again when you can have the most delicious pancakes that are more cruelty-free? Your four legged and feathered friends will thank you AND you'll be thanking goodness that such a great pancake exists. Top these pancakes with any of your favorite toppings. Make them maple walnut by adding traditional maple syrup and walnuts or maple pecan in the same way. You can add strawberries, blueberries, bananas or other fruits right to the batter (chocolate chips too), or top them with those delicious fruit or a jelly / compote later. Whatever you desire! BEST OF THE BEST PANCAKE RECIPE - HAPPENS TO BE PLANT-BASED & VEGAN (for less cruelty) 1 cup all purpose flour 1 tablespoon sugar 2 teaspoons baking powder ½ teaspoon salt Egg replacer for one large egg (ENR-G brand egg replacer powder works great.) ¾ cup non-dairy milk (We recommended rice milk or soy milk.) ¼ cup plant-based butter melted Directions: Add all ingredients to a large bowl in the order above and then whisk together to combine. Pour batter onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown. Recipes notes: For your plant-based butter Earth Balance will absolutely work great, but if you even want to go palm-oil free check out Miyoko's Butter or try making your own batch via a recipe on the internet (they usually involve coconut and or olive oil!).
